Nothing is better than a fresh pot of soup with vegetables from the garden! Here’s one that my mother makes and is a big hit with everyone at our house!
- 3 cups water 
- 1 med onion finely chopped 
- 1 med potato cubed or cut in strips 
- 1 med carrot, cut in short strips 
- 1 stalk celery, finely chopped or 1 stalk parsnip finely chopped 
- 1 green pepper chopped 
- 1 cup beets cut to shoe string (or canned shoestring beets) 
- 1 can baked beans or kidney beans 
- 1-2 cloves of garlic, mashed with salt 
- 1 tsp sugar 
- 2/3 tsp butter 
- 1 tsp salt (add more to taste) 
- 1 can tomato sauce or 1 can tomato soup 
- 1/2 cup parsley finely chopped 
- Topping sour cream or un-whipped whipping cream 
Directions
- Pour water into pan, bring to boil. 
- Add onion, potato, carrot, celery, green pepper, & beets 
- When veggies are not quite soft add remainder of ingredients except the tomato sauce and parsley 
- Cook till veggies are soft. 
- Add tomato sauce and parsley 
- Bring to boil 
- Remove from heat and serve with a tsp of sour cream or whipping cream
