My son loves anything with lemon. Here’s an easy recipe for a semi-healthy cookie (can we call cookies healthy?)
Ingredients
- 1 ½ cups rolled oats (gluten-free if needed) 
- ¾ cup almond flour 
- ¼ cup honey or maple syrup 
- 1 egg (or flax egg: 1 tbsp flaxseed + 2.5 tbsp water) 
- ¼ cup coconut oil, melted 
- 1 tsp vanilla extract 
- Zest of 1 lemon 
- 2 tbsp fresh lemon juice 
- ½ tsp baking soda 
- ½ tsp cinnamon 
- ¼ tsp sea salt 
- ⅓ cup sliced almonds 
- Optional: ¼ cup dried cranberries or white chocolate chips 
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper. 
- In a bowl, whisk together honey, egg, coconut oil, vanilla, lemon zest, and lemon juice. 
- In a separate bowl, mix oats, almond flour, baking soda, cinnamon, and salt. 
- Combine wet and dry ingredients, then fold in almonds and optional add-ins. 
- Scoop tablespoon-sized amounts onto the baking sheet, flatten slightly. 
- Bake for 10-12 minutes, until golden brown. 
- Cool on a wire rack and enjoy!
