Banana Coconut Chocolate Muffins
Sneaking protein into foods can sometimes be tricky and adding protein powder to baking is even trickier. The internet tells me the secret is to not over mix the protein powder and to bake at a lower temp.
2 ripe bananas
3/4 cup ripe bananas
2 eggs
3 tbsp melted butter
1 tsp vanilla
— Mix together —
In a seperate bowl (or add in, I try to make as little a mess as possible when baking)
1/2 cup coconut flour
1 cup flour
1/2 cup shredded unsweetened coconut
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1/4 tsp cinnamon
— Mix together with wet ingredients —
Add
1/2 cup chocolate chips (frozen blueberries would probably work really well)
2 scoops vanilla protein powder
— Mix lightly —
Spray non-stick muffin tin with oil OR line muffin tray with cups
Bake at 325 for around 20 minutes (+/- 2 minutes) - but start watching them around 15 minutes
They came out perfect, but the internet says baking can come out more dry when using coconut flour, so If they seem a little try, you can try adding another 1/3-1/4 cup of greek yogurt.
